Whether you are a beginner, an experienced home baker or a professional chef, Noel can help you unlock your inner pizza genius. He'll teach you the same recipes and artisan baking techniques he teaches to the world's best restaurant chefs so you can go back to your own kitchen or restaurant and make great artisan pizza and bread in your own oven. It may sound crazy but Noel promises to set you on your way to making better pizza and bread than you get at most restaurants and pizzerias.

He'll cover a variety of beginning, intermediate and advanced baking topics including flour types, mixing styles, artisan dough techniques and characteristics, controlling fermentation, hydration and how water affects the final product, yeast vs sourdough, oven techniques, topping preparation and home-hacks that everyone can do.

More specifically, you will spend the first hour of the class learning the fundamentals of baking and discussing common issues that all bakers need to understand. The first batch of dough will go into the oven and soon we will be eating some of the best bread we have ever tasted. The second hour of the class is then dedicated to learning the four basic artisan dough mixing styles: hand mix, short mix, improved mix and intensive mix. Finally the final hour will be spent stretching, topping, baking and eating lots and lots of New York and Neapolitan pizza.

Formerly in Culver City, Surfas opened this new location and Noel was hand picked to inaugurate the Test Kitchen by doing demos, teaching classes and doing pizza R&D and consulting for lots of new restaurants and pizzerias around the world. The neighborhood of Arlington Heights is not only historic but it is also experiencing major development, growth and prosperity.

This was a wonderful experience. I'm a home baker, but also with some professional cooking, baking, and food science experience, and I got a lot out of the class and my conversations with Noel. Skills in the class ranged from beginner to advanced, but everyone seemed to get something out of the course. Noel is willing to answer all your questions, you get to eat some wonderful food, and you even get to take some home! Would happily take the class again to learn more.

Cannot say enough great things about this experience! Noel was incredibly knowledgeable and taught us in a way that was easy to understand but also not a "short cut" - really delved into the ins and outs and time that needs to go into a good dough. Great value too, several hours, lots of pizza, and hands on instruction. Left with the skills and recipes to make some bomb za at home! Highly recommend (and great for all ages).

In short: fantastic and delicious! This was extremely educational but also fun - what was surprising was that despite the range of complete baking beginners to people who owned fancy ovens or even chefs - everyone seemed to need to learn the same stuff. Noel, Justin and the whole team were excellent and helpful and it ran like a well oiled machine and yet was not remotely impersonal. We ran over by nearly an hour but they checked with us all first if we had hard outs - mostly it’s very clear they love what they do and what they do is complex and interesting with yummy results. Also the location is awesome - a must for kitchen/cooking equipment lovers!

Awesome hands-on class. The whole staff made us feel welcome and enthusiastic for making some great pizza. Best of all we had pizza to take back to our place afterwards :)
